If you’re anything like me then you’ll love sea food and more to the point fresh fish. Living in NZ we are spoilt for choice and are fortunate to be able to enjoy our kai moana extremely fresh. One of my favourite fish would have to be Tuna, not the mashed up rubbish you get in the can but fresh tuna steaks. It’s very rear that you’ll find tuna steaks in a supermarket so you’ll need to venture down to the fish markets on Halsey Street. Over the years I have perfected my tuna steak marinade so here it is.
Ingredients
Fresh garlic
Fresh ginger
Orange rind
Dark soy sauce with reduced salt
Honey
Fish sauce
Preparation Time
- 5 mins to prepare plus 8 hours to marinade
Method
In a bowl mix a cup of soy sauce, grate ginger and garlic to taste. Add about a tablespoon of finely grated orange rind. Add a tablespoon of honey (you’ll need to run boiling water over your spoon so the honey slides off it) and finally add a drop or town of fish sauce. Mix until blended together.
Place steaks in a container and coat with marinade. Cover your container with glad wrap and put in the fridge. Be sure to leave overnight for the best result.
Cooking
Heat a frying pan with extra virgin olive oil. Cook steaks until brown on the outside but ensuring they remain raw on the inside- this should only take about a minute on each side.

This one is going to have to go in the back pocket for V-Day! Tuna is key but don’t over cook it!!!
